It's only Moldovian Puffs that are described as untrustworthy and heathenish, but cats generally are more difficult to set to a task not of their choosing than, say, Martellus' "big hairy dog monsters" are.
The Jäger was not Martellus' minion, but Martellus has no apparent compunctions about sacrificing anyone (except himself and maybe Seffie) if it forwards his ambitions. The ginger cat has had some time to talk with Seffie, who I expect has Things To Say About Martellus, and quite possibly also to do some observing of humans (will she use her cuteness as effectively as Krosp does?) and reading or other research. She probably has some idea of the risks, and also of how critical she is to him currently. (If he killed her, would he have time to build another Agatha-substitute before the withdrawal reaction knocked him flat again?)
